Oatmeal Peanut Butter Energy Bites

Ingredients
  

  • 1 cup rolled oats old-fashioned oats are best
  • 1/2 cup creamy peanut butter natural, no-sugar-added preferred
  • 1/3 cup honey or maple syrup adjust to your sweetness preference
  • 1/4 cup ground flaxseed optional, for added fiber and nutrients
  • 1/4 cup mini chocolate chips dark or semi-sweet work well
  • 1 teaspoon vanilla extract
  • Pinch salt enhances flavor

Equipment

  • Parchment paper or wax paper

Method
 

  1. Gather all your ingredients and a medium-sized mixing bowl. Line a baking sheet with parchment paper or wax paper. This will prevent the energy bites from sticking as they firm up.
  2. In the mixing bowl, add the creamy peanut butter, honey or maple syrup, and vanilla extract. Stir these ingredients together until they are well combined and form a smooth, cohesive mixture.

  3. To the wet mixture, add the rolled oats, ground flaxseed (if using), and a pinch of salt. Mix everything thoroughly until all the dry ingredients are evenly distributed throughout the peanut butter mixture.

  4. Gently fold in the mini chocolate chips. Stir just enough to distribute them evenly. Try not to overmix at this stage to prevent the chocolate chips from melting too much into the mixture.

  5. Take about one tablespoon of the mixture at a time and roll it between your palms to form small, compact balls. If the mixture feels too sticky, you can lightly dampen your hands with water.
  6. Place the rolled energy bites onto the prepared baking sheet. Once all the mixture has been formed into bites, transfer the baking sheet to the refrigerator. Let them chill for at least 30 minutes to firm up before serving.

Notes

Best stored in an airtight container in the refrigerator for up to two weeks. Can be frozen for up to three months.
