  • 1.5 cups vegetable broth (or chicken broth)
  • 0.5 cup heavy cream (or half-and-half for a lighter option)
  • 5 oz fresh spinach roughly chopped
  • 4 oz feta cheese crumbled
  • 0.25 teaspoon black pepper or to taste
  • Pinch red pepper flakes (optional, for a touch of heat)
  • Fresh basil or parsley for garnish (optional)

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the finely chopped yellow onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.

  2. Add the pre-made potato gnocchi directly to the skillet. Pour in the vegetable broth and scrape the bottom of the pan to loosen any browned bits, which will add extra flavor.

  3. Bring the mixture to a gentle simmer. Cook, stirring occasionally, for about 5-7 minutes, or until the gnocchi begin to float to the surface and are cooked through.
  4. Reduce the heat to low. Pour in the heavy cream (or half-and-half) and stir gently to combine. Add the roughly chopped fresh spinach, a handful at a time, stirring until it wilts into the sauce.
