Method
 

  1. Start by finely crushing the Oreo cookies. You can do this by placing them in a food processor and pulsing until they form fine crumbs, or by placing them in a zip-top bag and using a rolling pin to crush them manually. Ensure there are no large chunks left.

  2. In a medium bowl, combine the finely crushed Oreo crumbs with the softened cream cheese. Mix thoroughly until well incorporated and a cohesive dough-like mixture forms. This might take a minute or two of good mixing to ensure the cream cheese is evenly distributed throughout the crumbs.

  3. Take small portions of the mixture (about 1 tablespoon each) and roll them between your palms to form uniform balls. Aim for consistency in size so they all bake (or set, in this case) evenly. You should get approximately 20-24 truffle balls.
  4. Place the rolled truffle balls on a baking sheet lined with parchment paper. Refrigerate them for at least 30 minutes, or until they are firm to the touch. This chilling step is crucial to ensure they hold their shape when dipped in chocolate.
  5. While the truffles are chilling, melt the white chocolate chips or candy melts. You can do this using a double boiler or by microwaving them in short intervals (30 seconds), stirring between each interval, until smooth and completely melted. Be careful not to overheat them, as white chocolate can burn easily.

  7. Working with one chilled truffle at a time, dip it into the pink melted white chocolate, ensuring it's fully coated. You can use a fork or a toothpick to help dip and lift the truffle. Allow any excess chocolate to drip back into the bowl before placing the coated truffle back onto the parchment-lined baking sheet.
  8. Immediately after dipping, while the chocolate coating is still wet, you can add your desired decorations. Sprinkle with edible glitter, add small candy sprinkles, or drizzle with a little extra melted white chocolate (colored or uncolored).
