Ingredients

  • 2 large (12.5 oz each) cans cooked chicken breast drained and shredded (about 3 cups)
  • 1 (8 oz) block cream cheese softened
  • 1/2 cup buffalo wing sauce (Frank's RedHot original is highly recommended)
  • 1/2 cup ranch dressing (or blue cheese dressing, if preferred)
  • 1 1/2 cups shredded sharp cheddar cheese divided
  • 1/2 cup shredded Monterey Jack cheese divided
  • 2 tablespoons chopped fresh chives or green onions for garnish (optional)
  • Crackers for serving
  • tortilla chips for serving
  • celery sticks for serving
  • carrot sticks for serving

Equipment

  • 8x8 inch baking dish or 1.5-quart oven-safe dish
  • Large mixing bowl
  • Sturdy spoon or spatula

Method

  1. Preheat Oven & Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or a shallow 1.5-quart oven-safe dish.
  2. Shred Chicken: If using canned chicken, drain it thoroughly and shred it into small pieces using two forks. If using leftover cooked chicken, shred it similarly. Place the shredded chicken in a large mixing bowl.
  3. Combine Wet Ingredients: Add the softened cream cheese, buffalo wing sauce, and ranch dressing (or blue cheese dressing) to the bowl with the shredded chicken.
  4. Add Cheese (Part 1): Add 1 cup of the shredded sharp cheddar cheese and 1/4 cup of the shredded Monterey Jack cheese to the bowl. Reserve the remaining cheese for the topping.
  5. Mix Thoroughly: Using a sturdy spoon or spatula, mix all the ingredients together until well combined. Ensure the cream cheese is fully incorporated and evenly distributed throughout the chicken mixture.
  6. Transfer to Baking Dish: Spoon the chicken mixture into the prepared baking dish, spreading it out evenly.
  7. Add Topping: Sprinkle the remaining 1/2 cup of sharp cheddar cheese and 1/4 cup of Monterey Jack cheese evenly over the top of the dip.
  8. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the dip is hot, bubbly around the edges, and the cheese on top is melted and lightly golden brown.
  9. Garnish & Serve: Carefully remove the dip from the oven. If desired, sprinkle with fresh chopped chives or sliced green onions for a pop of color and freshness. Serve immediately with your favorite dippers like crackers, tortilla chips, celery, and carrot sticks.
