Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup. Remove any wilted outer leaves from the cabbage. Stand the cabbage upright on its base and carefully slice it into four thick "steaks," each about 1-inch thick. The core will help hold the steaks together. If any outer leaves start to fall apart, don't worry, you can roast them separately; they'll just be more like wedges.

  2. In a small bowl, whisk together 3 tablespoons of olive oil, the thinly sliced or minced garlic, smoked paprika, and onion powder. Season generously with salt and freshly ground black pepper. This garlic-infused oil is the flavor powerhouse of this dish.
