  1. Melt the butter in a large skillet or frying pan over medium heat.
  2. Add the sliced peaches to the skillet in a single layer.
  3. Sprinkle the brown sugar and cinnamon evenly over the peaches.
  4. Cook for 4-5 minutes per side, until the peaches are tender and lightly caramelized. Stir gently to prevent sticking.
  5. Stir in the vanilla extract just before serving.
