- In a small saucepan, bring 4 cups of water and the sugar to a boil. Stir until the sugar is completely dissolved. Remove from heat.
- Add the tea bags to the hot sugar water. Let the tea steep for 4 to 5 minutes. Do not over-steep, as this can make the tea bitter.
- Remove the tea bags and allow the tea base to cool slightly (about 10 minutes). Transfer the brewed tea to a large pitcher.
- Stir in the passion fruit pulp and the fresh lime juice into the cooled tea base. Taste and adjust sweetness or tartness if necessary.
- Chill the mixture in the refrigerator for at least 1 hour, or until thoroughly cold. For immediate serving, fill glasses with ice cubes.
- Pour the chilled passion fruit iced tea over the ice. Garnish each glass with half of a fresh passion fruit, allowing the seeds to float on top for an authentic presentation.
Notes
For a bubbly variation, replace 1 cup of water with sparkling water after chilling. Fresh passion fruit provides the best flavor, but frozen puree works well if fresh is unavailable.
