  • 8 oz fresh mozzarella sliced or torn into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 0.5 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • salt to taste
  • black pepper freshly ground, to taste

Method
 

Instructions
  1. Arrange the sliced peaches, fresh mozzarella, and halved cherry tomatoes on a serving platter or individual plates.
  2. Tuck fresh basil leaves in between the peach and mozzarella slices.
  3. Drizzle the salad generously with extra virgin olive oil.
  4. Season with salt and freshly ground black pepper to your liking.
  5. Finish by drizzling the balsamic glaze over the entire salad.
  6. Serve immediately and enjoy the sweet and savory flavors.

Notes

For best results, use ripe but firm peaches. You can grill or lightly pan-sear the peach slices for a warm variation. Ensure your mozzarella is good quality for the best flavor and texture. A sprinkle of toasted pine nuts can add a lovely crunch.
