Ingredients
  

  • 2 cups fresh or frozen peach slices (thawed if frozen)
  • 1 cup freshly squeezed lemon juice (from about 4-6 lemons)
  • 1/2 cup granulated sugar, or to taste start with less and adjust
  • 1/2 cup water
  • 1/4 teaspoon salt (optional) enhances sweetness
  • 1-2 tablespoons water if blender is struggling

Method
 

  1. If using fresh peaches, wash, pit, and slice them. If using frozen peaches, ensure they are thawed. Place the peach slices into a blender or food processor. Blend until you have a smooth, lump-free puree. You may need to add a tablespoon or two of water if your blender is struggling, but aim for a thick puree.

  2. In a medium-sized bowl or pitcher, combine the freshly squeezed lemon juice, granulated sugar, and 1/2 cup of water. Stir vigorously until the sugar is completely dissolved. Taste the lemonade mixture and adjust the sweetness to your preference. Remember that once frozen, flavors can be slightly muted, so aim for a slightly sweeter and tarter lemonade than you might drink straight. If desired, add the pinch of salt.

  3. Pour the peach puree into the lemonade mixture. Stir well to combine all the ingredients thoroughly. Ensure there are no streaks of puree or undissolved sugar.
  4. Carefully pour the peach lemonade mixture into your popsicle molds, leaving about 1/4 inch of space at the top of each mold to allow for expansion during freezing.
  5. If your popsicle molds don't have built-in holders for sticks, carefully insert popsicle sticks into the center of each mold. Make sure they stand upright.
  6. Place the filled popsicle molds on a flat surface in your freezer. Freeze for at least 4-6 hours, or until the popsicles are completely solid and firm. The exact freezing time will depend on your freezer's temperature and the size of your molds.
  7. To easily unmold the popsicles, run the outside of the mold under warm water for a few seconds. Gently wiggle the popsicle stick to release the frozen treat. Serve immediately and savor the taste of summer!

Notes

Store individually wrapped in plastic wrap or parchment paper, then in a freezer-safe airtight container or freezer bag for up to 1-2 months. Allow to sit at room temperature for 30-60 seconds before enjoying.
