Method
- In a medium-sized bowl, combine the Greek yogurt, natural peanut butter, honey or maple syrup, and vanilla extract. If you’re using a pinch of salt, add it now.2 cups unsweetened Greek yogurt, 1/2 cup natural peanut butter, 1/4 cup honey or maple syrup, 1 teaspoon vanilla extract, Pinch salt
- Whisk these ingredients together thoroughly until they are well combined and the mixture is smooth and uniform. Ensure there are no lumps of peanut butter remaining.
- For an extra smooth texture, you can transfer the mixture to a food processor and blend for another minute, or use an immersion blender.
- Pour the mixture into a freezer-safe container, such as a loaf pan or an airtight plastic container.
- Cover the container tightly to prevent freezer burn.
- Place the container in the freezer and let it freeze for at least 4-6 hours, or until firm and scoopable. For optimal texture, stir the mixture every hour for the first 2-3 hours to break up ice crystals.
- Once frozen, let the Peanut Butter Frozen Greek Yogurt sit at room temperature for 5-10 minutes before scooping to soften slightly for easier serving.
- Scoop into bowls and enjoy your homemade, healthy treat!
Notes
For longer storage, transfer the frozen Greek yogurt to an airtight container. Press a piece of parchment paper or plastic wrap directly onto the surface of the yogurt before sealing the container to minimize air exposure and prevent ice crystals. Properly stored, it can last for up to 1-2 months.
