- In a medium-sized mixing bowl, add the rolled oats, ground flaxseed, and chia seeds (if using). Stir them together until they are well combined. This forms the base of our energy bites and provides essential fiber.1 cup rolled oats, 1/4 cup ground flaxseed, 2 tablespoons chia seeds
- To the bowl with the dry ingredients, add the creamy peanut butter, honey or maple syrup, and vanilla extract.1/2 cup creamy peanut butter, 1/3 cup honey or maple syrup, 1 teaspoon vanilla extract
- Using a sturdy spoon or a spatula, begin mixing the ingredients. Continue stirring until everything is thoroughly incorporated. The mixture should start to come together into a cohesive dough.
- If the mixture seems too dry and crumbly, add 1 tablespoon of water or milk at a time, continuing to mix. You want a consistency that holds together when pressed, but isn't overly sticky. Be careful not to add too much liquid.1-2 tablespoons water or milk
- If you are using mini chocolate chips, gently fold them into the mixture. Ensure they are distributed evenly throughout the dough.1/4 cup mini chocolate chips
- Take small portions of the mixture, about 1 tablespoon each, and roll them between your palms to form compact balls. The warmth of your hands will help the mixture stick together. Aim for balls that are about 1 inch in diameter.
- Place the rolled Peanut Butter Oatmeal Balls onto a plate or baking sheet lined with parchment paper. Once all the mixture is rolled, place the plate or sheet in the refrigerator for at least 20-30 minutes. This step is crucial for allowing the balls to firm up and hold their shape.
Notes
These Peanut Butter Oatmeal Balls are best stored in an airtight container in the refrigerator and will stay fresh for up to 1 week. They can also be frozen for up to 2-3 months.
