- In a food processor, combine the rolled oats and chopped pecans. Pulse a few times until the oats are roughly chopped and the pecans are broken down into smaller pieces, but not a fine powder. This creates a good texture for our protein bites.1 cup rolled oats, 1/2 cup chopped pecans
- Add the softened and chopped dates (or maple syrup/honey), unsweetened applesauce, almond butter, vanilla extract, cinnamon, and salt to the food processor.1/4 cup pitted dates, 2 tablespoons unsweetened applesauce, 1 tablespoon almond butter, 1 teaspoon vanilla extract, 1/4 teaspoon cinnamon, Pinch salt
- Process the mixture until it starts to come together and forms a sticky dough. You might need to scrape down the sides of the food processor a couple of times. The mixture should be moist enough to hold its shape when you roll it between your fingers. If it seems too dry, add another teaspoon of applesauce or a tiny splash of water; if too wet, add a tablespoon more oats.1 cup rolled oats, 2 tablespoons unsweetened applesauce
- Add the protein powder to the food processor. Pulse just until the protein powder is incorporated into the dough. Be careful not to overmix at this stage, as it can dry out the bites.1/4 cup unflavored or vanilla protein powder
- Remove the dough from the food processor. Using your hands, roll the mixture into small, bite-sized balls, about 1-inch in diameter. If your hands start to stick, you can lightly dampen them with water.
- Place the formed Pecan Pie Protein Bites on a parchment-lined plate or baking sheet. Refrigerate for at least 30 minutes to allow them to firm up before serving.
Notes
Store in an airtight container in the refrigerator for up to one week. For longer storage, freeze for up to 2 months.
