- Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe baking dish or ramekin (about 6-8 inches in diameter).
- In a medium mixing bowl, ensure your cream cheese is fully softened. This is crucial for achieving a smooth, lump-free dip. You can leave it on the counter for about an hour or gently microwave it in short bursts (10-15 seconds) if you’re in a hurry, being careful not to melt it completely.8 ounces cream cheese, softened
- Add the softened cream cheese to the mixing bowl. Pour in the pepper jelly. For a more integrated flavor, you can gently stir these together at this stage, but it's not strictly necessary as they will meld in the oven.8 ounces cream cheese, softened, 1/2 cup pepper jelly (your favorite flavor)
- Sprinkle the shredded sharp cheddar cheese and Monterey Jack cheese over the cream cheese and pepper jelly mixture in the bowl.1/4 cup shredded sharp cheddar cheese, 1/4 cup shredded Monterey Jack cheese
- Add most of the finely chopped fresh chives and parsley to the bowl, reserving a small amount of each for garnishing the top later. If you’re using, add the pinch of cayenne pepper now.2 tablespoons finely chopped fresh chives, 1 tablespoon finely chopped fresh parsley, Pinch cayenne pepper
- Using a spatula or a wooden spoon, gently mix all the ingredients until they are just combined. You want to see streaks of pepper jelly and distinct cheese colors, not a completely uniform mixture. Overmixing can make the dip dense.
- Spoon the mixture into your prepared oven-safe baking dish or ramekin, spreading it out evenly.
- Sprinkle the reserved chives and parsley evenly over the top of the dip.2 tablespoons finely chopped fresh chives, 1 tablespoon finely chopped fresh parsley
- Place the baking dish in the preheated oven. Bake for 15-20 minutes, or until the dip is bubbly around the edges and the cheese is melted and slightly golden brown on top. Keep an eye on it to prevent burning.
- Carefully remove the Pepper Jelly Cheese Dip from the oven. Let it sit for a minute or two before serving. It will be very hot.
Notes
Leftover dip can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven or microwave.
