  • 1/2 cup pineapple preserves or jam
  • 1/4 cup chopped cowboy candy (candied jalapeños, with a little brine)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or other hot sauce optional, for extra heat
  • Fresh cilantro, chopped for garnish
  • Sesame seeds for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup. Pat the chicken wings thoroughly dry with paper towels. This is a crucial step for achieving crispy wings!
  2. In a large bowl, toss the dried chicken wings with olive oil, salt, black pepper, garlic powder, and onion powder. Ensure each wing is evenly coated.

  5. While the wings are roasting, prepare the glaze. In a medium saucepan, combine the pineapple preserves or jam, chopped cowboy candy (including a tablespoon or two of the brine for extra zing), soy sauce, rice vinegar, and sriracha (if using).

  7. After the initial 20-25 minutes of baking, carefully flip the chicken wings. Brush or spoon a generous amount of the pineapple cowboy candy glaze over each wing.
  8. Return the baking sheet to the oven and continue baking for another 20-25 minutes, or until the wings are fully cooked, golden brown, and the glaze is sticky and caramelized. For an extra sticky finish, you can brush on another layer of glaze during the last 5-10 minutes of baking.
  9. Once cooked to perfection, remove the wings from the oven and let them rest for a few minutes on the baking sheet. This allows the glaze to set slightly.
