- In a medium-sized mixing bowl, add the creamy peanut butter, honey or maple syrup, and vanilla extract. Stir these ingredients together until they are well combined and form a smooth, cohesive mixture. - To the bowl containing the wet ingredients, add the rolled oats, ground flaxseed, mini chocolate chips (if using), and a pinch of salt (if desired).1 cup rolled oats, 1/4 cup ground flaxseed, 1/4 cup mini chocolate chips, pinch salt
- Using a sturdy spoon or spatula, mix all the ingredients together until everything is evenly distributed. Ensure there are no pockets of dry oats or peanut butter. The mixture should be thick and slightly sticky. If it feels too dry, you can add another teaspoon of honey or peanut butter; if it's too wet, add another tablespoon of oats or flaxseed.
- Cover the bowl with plastic wrap or a lid and refrigerate the mixture for at least 15-30 minutes. This chilling step is crucial as it helps the ingredients firm up, making them much easier to roll into balls.
- Once the mixture has chilled and is more manageable, take about a tablespoon of the mixture at a time and roll it between your palms to form small, compact balls, approximately 1-1.5 inches in diameter. If the mixture is still sticking to your hands, you can dampen your palms slightly with water or a tiny bit of oil.
- Your Pioneer Woman Protein Balls are now ready to be enjoyed! You can eat them immediately or store them as directed below.
Notes
These protein balls are best stored in an airtight container in the refrigerator and will stay fresh for up to two weeks. For longer storage, they can be frozen for up to three months. Thaw at room temperature for 15-30 minutes or enjoy frozen.
