  • 2 packages instant ramen noodles discard flavor packets or save for another use
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 1/4 cup marinara sauce or pizza sauce
  • 1/2 cup chicken broth or vegetable broth
  • 1/4 cup milk or heavy cream for a richer broth
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes optional, for a touch of heat
  • salt and freshly ground black pepper to taste
  • 4 ounces cooked ground beef, crumbled Italian sausage, or plant-based crumbles
  • 1/4 cup sliced pepperoni
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Method
 

  1. Bring a pot of water to a boil. Once boiling, add the two packages of instant ramen noodles. Cook according to package directions until al dente (usually 2-3 minutes). Drain the noodles well and set them aside in a bowl. Discard or save the original ramen flavor packets as they won't be used in this recipe.

  2. Heat the olive oil in a medium saucepan or deep skillet over medium heat. Add the finely chopped yellow onion and sauté for about 3-4 minutes, until softened and translucent. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

  3. Pour in the marinara or pizza sauce and the chicken or vegetable broth. Stir to combine with the onions and garlic. Bring the mixture to a simmer.

  4. Reduce the heat to low and stir in the milk or heavy cream. This will create a slightly creamy and richer broth. Add the Italian seasoning and red pepper flakes (if using).   5. Add the cooked ground beef, crumbled sausage, or plant-based crumbles to the simmering broth. Stir in the sliced pepperoni. Let the broth simmer gently for about 5 minutes, allowing the flavors to meld and the meats to heat through.

  6. Add the drained ramen noodles to the saucepan with the broth and toppings. Gently stir to ensure the noodles are fully submerged and coated in the delicious pizza-inspired sauce.

  7. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top of the noodles and broth. Cover the saucepan with a lid and let it sit for 2-3 minutes, or until the cheese is melted and bubbly.
