Ingredients

  • 8 ounces sharp cheddar cheese about 2 cups, shredded
  • 4 ounces Gruyère cheese about 1 cup, shredded
  • 4 ounces cream cheese softened
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Pinch cayenne pepper optional, for a subtle kick
  • Salt to taste
  • freshly ground black pepper to taste
  • Soft pretzels for serving

Equipment

  • Medium saucepan
  • Whisk
  • Serving bowl

Method

  1. Prepare Your Cheeses: Begin by shredding the sharp cheddar and Gruyère cheeses if they aren't pre-shredded. Ensure the cream cheese is softened to room temperature; this will help it melt smoothly into the sauce. Having all your ingredients prepped and ready before you start cooking can make the process much smoother.

  2. Make a Roux: In a medium saucepan, melt the 1/4 cup of unsalted butter over medium heat. Once the butter is fully melted and slightly shimmering, whisk in the 2 tablespoons of all-purpose flour. Continue whisking constantly for 1-2 minutes until a smooth paste, or roux, forms. This step is crucial for thickening your dip and preventing it from becoming watery.

  3. Create the Cheese Sauce Base: Gradually pour in the 1/2 cup of whole milk into the roux, whisking continuously to avoid lumps. Bring the mixture to a gentle simmer, allowing it to cook for about 2-3 minutes, or until it has visibly thickened. The consistency should be similar to a thin gravy.

  4. Add the Flavorings: Reduce the heat to low. Stir in the softened cream cheese, Dijon mustard, garlic powder, smoked paprika, and the pinch of cayenne pepper (if using). Continue stirring until the cream cheese is fully melted and incorporated, creating a smooth and uniform base.

  5. Melt the Cheeses: Now, gradually add the shredded cheddar and Gruyère cheeses to the saucepan, a handful at a time. Stir continuously until each addition of cheese is completely melted and smoothly combined before adding more. This gradual process helps prevent the cheese from clumping and ensures a silky-smooth dip.

  6. Season to Perfection: Once all the cheese is melted and the dip is creamy and uniform, taste and season with salt and freshly ground black pepper as needed. Remember that some cheeses are naturally salty, so start with a small amount and adjust to your preference.

  7. Serve Immediately: Transfer the warm Pretzel Cheese Dip to a serving bowl. Serve immediately with a generous pile of soft pretzels for dipping. You can also offer other dippers like pretzel bites, breadsticks, apple slices, or even roasted vegetables. This dip is best enjoyed warm, as its texture will be at its peak.
