- Drain the mozzarella pearls from their liquid and place them on a paper towel. Pat them thoroughly dry to ensure the prosciutto adheres properly.
- Lay a strip of prosciutto on a clean cutting board. Place one fresh basil leaf in the center of the strip, then place a mozzarella pearl on top of the leaf.
- Tightly wrap the prosciutto around the mozzarella and basil, overlapping the ends to secure it. If necessary, use a decorative toothpick to hold it together.
- Optional: For a warm version, place the bites in a non-stick skillet over medium-high heat for 30 seconds per side until the prosciutto is slightly crispy and the cheese starts to soften.
- Arrange the bites on a serving platter. Drizzle lightly with extra virgin olive oil and the balsamic glaze reduction.
- Finish with a light sprinkle of flaky sea salt and freshly ground black pepper just before serving at room temperature.
Notes
For the best results, use 'Ciliegine' size mozzarella. If you cannot find balsamic glaze, you can make your own by reducing 1/2 cup of balsamic vinegar with 1 tablespoon of honey in a small saucepan over low heat until syrupy.
