- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the unsweetened pumpkin puree, large egg, and unsweetened applesauce until well combined and smooth.1/2 cup unsweetened pumpkin puree, 2 tablespoons unsweetened applesauce

- Gradually add the rolled oats to the wet mixture, stirring until a thick dough forms. It should be firm enough to handle.1 cup rolled oats
- Take small portions of the dough (about a tablespoon) and roll them between your hands to form log or stick shapes, approximately 3-4 inches long and about 1/2 inch thick.
- Place the formed snack sticks onto the prepared baking sheet, leaving a little space between each one.
- Bake for 18-25 minutes, or until the snack sticks are firm to the touch and lightly golden on the edges. The exact time will depend on the thickness of your sticks and your oven.
- Remove from the oven and let the snack sticks cool completely on the baking sheet or a wire rack. They will firm up more as they cool.
Notes
Store in an airtight container in the refrigerator for up to one week. Can be frozen for up to 3 months.
