- Prepare the strawberry puree: Combine the strawberries, sugar (or syrup), and lemon juice in a small blender or food processor. Blend until completely smooth.
- Strain the puree through a fine-mesh sieve into a small bowl, pressing gently on the solids to extract all the liquid. Discard any excess pulp. Set aside.
- Prepare the matcha: Sift the matcha powder into a bowl or ceremonial matcha bowl. Add the 2 tablespoons of hot water.
- Whisk the matcha vigorously in a 'W' or 'M' pattern using a bamboo whisk (chasen) until no clumps remain and a light froth forms on top.
- Assemble the drink: Add a generous amount of ice cubes to a tall glass.
- Pour the strawberry puree over the ice, filling the bottom third of the glass.
- Gently pour the milk over the puree and ice. Slowly pour the prepared, whisked matcha over the top of the milk layer for a distinct layered effect.
- Serve immediately with a straw, encouraging the drinker to stir before consumption.
Notes
For best layering results, ensure the milk is cold and pour the matcha slowly over the back of a spoon placed just above the milk surface. Adjust sweetness based on the ripeness of your strawberries.
