Ingredients
  

  • 1 pound cooked, peeled, and deveined small shrimp, roughly chopped
  • 1/2 pound lump crab meat, picked over for shells
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Old Bay seasoning
  • to taste salt and freshly ground black pepper
  • 1/4 cup shredded cheddar cheese plus more for topping
  • 1/4 cup shredded Monterey Jack cheese
  • 8-10 large, flaky biscuits (homemade or store-bought), split horizontally
  • Butter for brushing

Method
 

  1. Preheat your oven to 375°F (190°C). Generously butter a baking sheet. Split each biscuit in half horizontally, creating a top and bottom for each melt. Place the bottom halves of the biscuits onto the prepared baking sheet, cut-side up.

  2. In a medium bowl, gently combine the chopped cooked shrimp and the lump crab meat.

  3. In a separate small bowl, whisk together the mayonnaise, finely chopped celery, finely chopped red onion, fresh lemon juice, Dijon mustard, Worcestershire sauce, and Old Bay seasoning. Season the mixture with salt and freshly ground black pepper to your liking. Ensure all ingredients are well combined.

  4. Gently fold the creamy binder mixture into the shrimp and crab mixture until evenly coated. Be careful not to overmix, as this can break down the crab meat too much.
  5. Stir in the shredded cheddar cheese and shredded Monterey Jack cheese into the shrimp and crab mixture until just incorporated.

  6. Spoon a generous portion of the shrimp and crab filling onto the center of each bottom biscuit half on the baking sheet. Don't be afraid to mound it up slightly.
  7. Sprinkle a little extra cheddar cheese over the top of each melt. Place the top halves of the biscuits onto the filling. Brush the tops of the biscuits lightly with melted butter for extra golden crispiness.
