Ingredients
  

Salad Base & Meat
  • 1 lb Ground beef 80/20 recommended
  • 1 packet Taco seasoning mix Or equivalent homemade blend
  • 1/2 cup Water
  • 1 head Iceberg lettuce Shredded
  • 1 can (15 oz) Kidney beans Rinsed and drained
  • 1 cup Diced tomatoes
Toppings
  • 1 cup Shredded cheddar cheese Or Mexican blend
  • 1 cup Doritos (Nacho Cheese flavor) Crushed slightly
  • 1/2 cup Sour cream For topping
  • 1/4 cup Salsa Your favorite kind

Method
 

Instructions
  1. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon as it cooks.
  2. Once the beef is fully cooked, drain off any excess grease. Return the beef to the skillet.
  3. Stir in the taco seasoning mix and water. Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, until the mixture has thickened slightly.
  4. In a very large serving bowl, combine the shredded lettuce, rinsed kidney beans, and diced tomatoes.
  5. Spoon the warm taco meat mixture evenly over the lettuce mixture. If serving immediately, top with shredded cheese.
  6. Garnish the salad generously with crushed Doritos, a dollop of sour cream, and a drizzle of salsa before serving.

Notes

For best results, keep the warm meat and cold salad ingredients separate until just before serving to maintain the crunch of the Doritos. If making ahead, save the Doritos and cheese for the end.
