- In a medium saucepan, bring 4 cups of water to a gentle simmer (just before boiling). Do not let it come to a rolling boil; high heat can make green tea bitter.
- Remove the saucepan from the heat. Add the green tea bags (or loose leaf tea in a steeper) and the 1/2 cup of fresh mint leaves to the hot water. Cover the pan.
- Steep for exactly 4 minutes. Over-steeping causes bitterness. After 4 minutes, remove the tea bags and strain out the mint leaves thoroughly.
- While the tea is still warm, stir in the 1/4 cup of honey until it is completely dissolved into the tea concentrate. Allow the concentrate to cool slightly at room temperature for about 10 minutes.
- Combine the cooled tea concentrate with the 3 cups of cold water in a large pitcher. Stir well to combine.
- To serve, fill tall glasses generously with ice cubes. Pour the iced tea over the ice. Garnish each serving with a fresh mint sprig.
Notes
For a stronger mint flavor, gently muddle the mint leaves before adding them to the hot water. If you prefer it sweeter, add honey incrementally until desired consistency is reached. This tea will keep well in the refrigerator for up to 3 days.
