Dip Base
  • 16 ounces Non-fat Greek yogurt Plain
  • 1 packet Low-sodium taco seasoning mix
  • 4 ounces Light cream cheese Softened
Layer Ingredients
  • 1 cup Refried beans Fat-free
  • 1 cup Shredded low-fat cheddar cheese
  • 0.5 cup Salsa Medium heat
  • 0.25 cup Diced Roma tomatoes
  • 2 tablespoons Sliced black olives Rinsed and drained
  • 2 tablespoons Diced green onions

Method
 

Instructions
  1. In a medium bowl, combine the Greek yogurt, softened light cream cheese, and one packet of taco seasoning. Mix thoroughly until completely smooth and well combined. This is your first layer base.
  2. In a separate microwave-safe bowl, warm the fat-free refried beans slightly (about 30 seconds) just to make them easier to spread.
  3. Choose a serving dish (an 8x8 inch dish or a similar shallow bowl works well). Evenly spread the warmed refried beans across the bottom of the dish.
  4. Carefully spoon the yogurt and seasoning mixture over the bean layer and spread gently to cover the beans entirely, avoiding mixing the layers.
  5. Sprinkle the shredded low-fat cheddar cheese evenly over the yogurt layer.
  6. Top the cheese layer with the salsa, followed by the diced Roma tomatoes, sliced black olives, and green onions.
  7. Cover the dip and refrigerate for at least 1 hour before serving to allow the flavors to meld and the dip to firm up. Serve chilled with your favorite baked tortilla chips or vegetable sticks.

Notes

For an extra layer of flavor and protein, a thin layer of pre-cooked lean ground turkey seasoned with extra taco spices can be added between the beans and the yogurt base. If preparing ahead, hold off on adding the tomatoes/onions until just before serving for maximum freshness.
