Ingredients
  

  • 1 cup Cream Cheese softened
  • 1/2 cup Goat Cheese crumbled
  • 1/4 cup Honey
  • 2 tablespoons Fresh Chives finely chopped
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Black Pepper freshly ground
  • 1 baguette thinly sliced and toasted
  • 1/4 cup Candied Pecans roughly chopped
  • 1/4 cup Dried Cranberries chopped
  • Fresh thyme sprigs Optional garnishes
  • extra honey drizzle Optional garnishes

Method
 

  1. Prepare the Cream Cheese Mixture: In a medium-sized mixing bowl, combine the softened cream cheese and crumbled goat cheese. Use a fork or a rubber spatula to mash them together until well blended and creamy. Ensure there are no large lumps of cheese remaining.

  2. Add Flavorings: To the cheese mixture, add the honey, finely chopped fresh chives, and lemon juice. Season with freshly ground black pepper. Stir all the ingredients together thoroughly until they are uniformly incorporated. Taste and adjust seasoning if necessary, adding a pinch more salt if desired, though the cheeses usually provide enough.

  3. Toast the Baguette Slices: Preheat your oven to 350°F (175°C). Arrange the thinly sliced baguette pieces in a single layer on a baking sheet. Bake for 5-7 minutes, or until lightly golden and crisp. Keep a close eye on them to prevent burning. Alternatively, you can toast them in a toaster oven or even a dry skillet over medium heat until crisp. Let them cool slightly before proceeding.

  4. Assemble the Appetizers: Once the baguette slices have cooled, take a small spoon or a butter knife and spread a generous dollop of the cream cheese and goat cheese mixture onto each toasted baguette slice. Ensure the spread covers most of the surface of the bread.

  5. Garnish and Serve: Evenly sprinkle the roughly chopped candied pecans and chopped dried cranberries over the top of each cheese-covered baguette slice. For an extra touch, you can drizzle a tiny bit more honey over the finished appetizers and garnish with a small sprig of fresh thyme. Arrange the Small Bite Appetizers on a serving platter and serve immediately.
