For the Corn Ribs
  • 4 large ears Fresh sweet corn, husks removed
  • 2 tablespoons olive oil
For the Smoky Sweet Rub
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper Adjust to preferred spice level
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  1. Prepare the corn: Carefully slice each ear of corn lengthwise into four equal quarters using a sharp, sturdy knife. This takes practice; support the cob securely on a cutting board.
  2. Mix the rub: In a small bowl, combine the smoked paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Coat the corn: Brush all sides of the corn quarters lightly with olive oil. Generously sprinkle the smoky sweet rub over every surface of the corn pieces, ensuring they are evenly coated.
  4. Cook using indirect heat (Grill or Oven): Preheat your outdoor grill to medium heat and set up for indirect cooking (coals on one side, no direct heat over the corn), or preheat your oven to 400°F (200°C). Place the corn flat on the grill grates or a baking sheet.
  5. Bake or grill for 25-30 minutes, turning the 'ribs' every 8-10 minutes to ensure even cooking and charring on all sides. The corn should be tender, and the spice rub caramelized.
  6. Serve immediately, perhaps drizzled with extra melted butter or a spicy aioli, as a unique appetizer or side dish.

Notes

Be extremely careful when cutting the corn into ribs; the cob can be slippery. Using a sturdy chef's knife and keeping your fingers clear is essential. For extra flavor, brush with a thin layer of barbecue sauce during the last 5 minutes of cooking.
