- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, gently toss the sliced peaches with 3/4 cup granulated sugar, cornstarch, lemon juice, 1/2 tsp cinnamon, and nutmeg until evenly coated. Pour the peach mixture into the prepared baking dish.
- In a separate medium bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick.
- Drop spoonfuls of the batter evenly over the peach filling in the baking dish. It doesn't need to cover completely.
- In a small bowl, combine the 2 tbsp granulated sugar and 1 tsp cinnamon for the topping. Sprinkle this mixture evenly over the batter.
- Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges. If the topping starts to brown too quickly, loosely tent the dish with foil.
- Let the cobbler cool for at least 10-15 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
For a richer flavor, you can add a splash of bourbon or a pinch of ground ginger to the peach filling. If using frozen peaches, do not thaw them before using. Adjust baking time as needed based on your oven.
