Ingredients
  

For the Peach Filling
  • 3 lbs peaches fresh or frozen, peeled, pitted, and sliced
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
For the Snickerdoodle Topping
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar for topping
  • 1 tsp cinnamon for topping

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, gently toss the sliced peaches with 3/4 cup granulated sugar, cornstarch, lemon juice, 1/2 tsp cinnamon, and nutmeg until evenly coated. Pour the peach mixture into the prepared baking dish.
  3. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick.
  6. Drop spoonfuls of the batter evenly over the peach filling in the baking dish. It doesn't need to cover completely.
  7. In a small bowl, combine the 2 tbsp granulated sugar and 1 tsp cinnamon for the topping. Sprinkle this mixture evenly over the batter.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges. If the topping starts to brown too quickly, loosely tent the dish with foil.
  9. Let the cobbler cool for at least 10-15 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For a richer flavor, you can add a splash of bourbon or a pinch of ground ginger to the peach filling. If using frozen peaches, do not thaw them before using. Adjust baking time as needed based on your oven.
