Ingredients
  

  • 1 cup Rolled Oats
  • ½ cup Unsweetened Applesauce
  • ¼ cup Plain Pumpkin Puree (unsweetened, not pie filling)
  • 2 tablespoons Pure Maple Syrup
  • 1 tablespoon Unsweetened Peanut Butter Ensure it does not contain xylitol!
  • 1 teaspoon Baking Powder

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the unsweetened applesauce, plain pumpkin puree, pure maple syrup, and unsweetened peanut butter until well combined and smooth.
    ½ cup Unsweetened Applesauce, ¼ cup Plain Pumpkin Puree (unsweetened, not pie filling), 2 tablespoons Pure Maple Syrup, 1 tablespoon Unsweetened Peanut Butter
  3. Stir in the rolled oats and baking powder until just combined. The mixture will be thick and sticky.

  4. Spread the batter evenly into the prepared baking pan, pressing it down gently with a spatula to create an even layer about ½ inch thick.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden.
  6. Let the Soft Baked Maple Donut Bars cool completely in the pan. Once cooled, lift them out using the parchment paper (if used) and cut into small, bite-sized bar shapes.

Notes

Store in an airtight container in the refrigerator for up to 5-7 days. Freeze for up to 2-3 months.
