Ingredients
  

  • 1 tablespoon sesame oil
  • 1 pound lean ground beef
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch knob fresh ginger, grated
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas or snow peas
  • 1/2 cup shredded carrots
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sriracha (or more, to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon cornstarch (optional, for thickening the sauce)
  • 2 tablespoons water (if using cornstarch)
  • Cooked rice, for serving (brown rice, white rice, or cauliflower rice)
  • Optional toppings: toasted sesame seeds, chopped scallions, a fried egg

Method
 

  1. In a small bowl, whisk together the soy sauce (or tamari), sriracha, rice vinegar, and honey (or maple syrup). If you prefer a thicker sauce, whisk the cornstarch and water together in a separate tiny bowl until smooth, then add it to the soy sauce mixture. Set aside.

  2. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and crumbly. Drain off any excess grease.

  3. Push the cooked ground beef to one side of the skillet. Add the sliced yellow onion to the hot part of the skillet and sauté for 2-3 minutes until it begins to soften. Add the minced garlic and grated ginger and stir for another 30 seconds until fragrant, then mix them into the ground beef.

  4. Add the broccoli florets, sliced red bell pepper, snap peas (or snow peas), and shredded carrots to the skillet with the beef and onions. Stir-fry for 4-6 minutes, or until the vegetables are crisp-tender. You want them cooked through but still retaining a slight bite.

  5. Pour the prepared sauce over the beef and vegetable mixture. Stir well to coat everything evenly. If you used cornstarch, the sauce will begin to thicken as it heats. Cook for another 1-2 minutes, stirring constantly, until the sauce has thickened to your desired consistency and coats the ingredients beautifully.
  6. Divide the cooked rice among serving bowls. Spoon the Spicy Ground Beef Stir-Fry generously over the rice. Garnish with any desired toppings such as toasted sesame seeds, chopped scallions, or a perfectly fried egg for an extra layer of richness.

Notes

Leftover Spicy Ground Beef Stir-Fry Bowl can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, use the stovetop or microwave and add a splash of water or broth if the mixture seems dry.
Freezing instructions: Allow the stir-fry to cool completely. Portion it into freezer-safe containers or heavy-duty freezer bags. It will stay fresh in the freezer for up to 2-3 months.
