- In a medium bowl, whisk together the olive oil, fresh lime juice, minced garlic, ground cumin, dried oregano, chili powder, salt, and black pepper. This zesty marinade is the heart of our Stovetop Carne Asada Street Tacos, infusing the beef with bright, aromatic flavors.1/4 cup Olive Oil, 1/4 cup Lime Juice, 2 cloves Garlic, 1 teaspoon Ground Cumin, 1 teaspoon Dried Oregano, 1/2 teaspoon Chili Powder, 1/2 teaspoon Salt, 1/4 teaspoon Black Pepper
- Add the thinly sliced flank steak or skirt steak to the marinade. Toss to ensure every piece is evenly coated. For maximum flavor, let the beef marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator if you have more time. The acid in the lime juice will begin to tenderize the meat, even with a short marination period.1.5 lbs Flank Steak or Skirt Steak
- Heat a large skillet or cast-iron pan over medium-high heat. Once the pan is hot and shimmering, add the marinated beef in a single layer. Avoid overcrowding the pan; you may need to cook the beef in batches to achieve a proper sear. Cook for 2-4 minutes per side, or until the beef is nicely browned and cooked through to your desired doneness. Remember, the steak will continue to cook slightly after it's removed from the heat.
- Transfer the cooked carne asada to a cutting board. Let it rest for about 5 minutes. This resting period is crucial for juicy meat. After resting, thinly slice the carne asada against the grain if you haven’t already, or chop it into smaller, bite-sized pieces perfect for street tacos.
- While the beef is resting, warm your corn tortillas. You can do this by briefly heating them in a dry skillet over medium heat for about 30 seconds per side until pliable, or by wrapping them in a damp paper towel and microwaving them for about 30-60 seconds. Soft, warm tortillas are essential for authentic Stovetop Carne Asada Street Tacos.12-16 small Corn Tortillas
- Spoon a generous portion of the seasoned carne asada onto each warm tortilla.
- Garnish your Stovetop Carne Asada Street Tacos with your favorite toppings. Popular choices include finely chopped white onion, fresh cilantro, a squeeze of fresh lime juice, salsa, and a dollop of Mexican crema or sour cream.Chopped White Onion, Chopped Fresh Cilantro, Lime Wedges, Salsa, Mexican Crema or Sour Cream
Notes
Storing Leftovers:
Refrigeration: Once cooled, store any leftover cooked carne asada in an airtight container in the refrigerator for up to 3-4 days. Store any assembled tacos separately. If you have plain cooked carne asada, it's best to store it without toppings to prevent them from becoming soggy.
Freezing: For longer storage, you can freeze the cooked and cooled carne asada. Place it in a freezer-safe bag or container, pressing out as much air as possible. Frozen carne asada will remain good for up to 2-3 months. Reheating Instructions:
Stovetop: The best way to reheat is on the stovetop. Heat a skillet over medium heat and add the carne asada. Cook, stirring occasionally, until heated through. This method helps to re-crisp the meat slightly.
Microwave: You can also reheat in the microwave; however, the texture may be softer. Place the carne asada on a microwave-safe plate and heat in 30-second intervals, stirring in between, until hot.
Oven: For larger quantities, spread the carne asada on a baking sheet and reheat in a preheated oven at 350°F (175°C) for 5-10 minutes, or until heated through.
Reheating Frozen Carne Asada: Thaw overnight in the refrigerator before reheating using one of the methods above.
