  • 1 lb strawberries hulled and quartered
  • 1 cucumber medium, peeled, seeded, and thinly sliced
  • 0.5 cup red onion thinly sliced
  • 0.25 cup fresh mint leaves chopped
  • 0.25 cup feta cheese crumbled (optional)
Dressing Ingredients
  • 3 tbsp olive oil extra virgin
  • 2 tbsp balsamic vinegar or red wine vinegar
  • 1 tsp honey or maple syrup
  • 0.25 tsp salt or to taste
  • 0.125 tsp black pepper freshly ground, or to taste

Method
 

Instructions
  1. In a large bowl, combine the quartered strawberries, sliced cucumber, and thinly sliced red onion.
  2. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. This is your dressing.
  3. Pour half of the dressing over the strawberry and cucumber mixture and gently toss to coat.
  4. Let the salad sit for about 5-10 minutes to allow the flavors to meld. This also helps to slightly soften the onion.
  5. Just before serving, add the chopped fresh mint and crumbled feta cheese (if using).
  6. Drizzle with the remaining dressing, if desired, and toss gently. Serve immediately.

Notes

For an extra crunch, you can add a handful of toasted slivered almonds or pepitas. If you don't have mint, fresh basil also works wonderfully in this salad.
