Ingredients
  

Salad Base
  • 4 cups Seedless watermelon cubed into 1-inch pieces
  • 2 cups Fresh strawberries hulled and quartered
  • 1 large English cucumber diced or sliced into half-moons
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh mint leaves thinly sliced (chiffonade)
  • 1/4 cup Red onion very thinly sliced (optional)
Lime Vinaigrette
  • 2 tablespoons Extra virgin olive oil
  • 1 large Lime juiced
  • 1 teaspoon Honey or agave nectar
  • 1/4 teaspoon Sea salt
  • 1/8 teaspoon Black pepper freshly cracked

Method
 

Instructions
  1. Prepare the fruit and vegetables: Cube the watermelon, quarter the strawberries, and slice the cucumber. Ensure they are roughly the same bite-sized scale.
  2. In a small glass jar or mixing bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until the dressing is well emulsified.
  3. In a large mixing bowl, gently combine the watermelon, strawberries, and cucumber. If using red onions, add them now.
  4. Drizzle the lime vinaigrette over the fruit mixture and toss very gently with large spoons to coat without bruising the berries.
  5. Add the crumbled feta cheese and the fresh mint leaves to the bowl. Give it one final, very light toss to distribute.
  6. Transfer to a chilled serving platter or keep in the bowl. Best served immediately while the fruit is cold and crisp.

Notes

To keep the salad from becoming too watery, wait to add the salt and dressing until right before serving. For an extra kick, add a pinch of chili lime seasoning or red pepper flakes.
