Dressing Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or maple syrup for vegan option
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper freshly ground, or to taste

Method
 

Instructions
  1. In a large bowl, combine the cubed watermelon, quartered strawberries, diced cucumber, crumbled feta cheese, and chopped mint leaves.
  2. In a small bowl or jar, whisk together the extra virgin olive oil, fresh lime juice, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the salad ingredients.
  4. Gently toss the salad to coat all the ingredients evenly with the dressing.
  5. Taste and adjust seasoning if needed. Add more salt, pepper, or lime juice to your preference.
  6. Serve immediately or chill for about 15-20 minutes before serving for a cooler salad.

Notes

This salad is best enjoyed fresh. For a bit of crunch, you can add toasted slivered almonds or pumpkin seeds. If you prefer a sweeter salad, add a bit more honey to the dressing. A balsamic glaze drizzle can also be a delicious addition.
