Ingredients
  

For the Smoothie
  • 2 nectarines ripe, pitted and roughly chopped
  • 1/2 cup frozen mango chunks for extra chill
  • 3/4 cup unsweetened almond milk or preferred milk
  • 1 tablespoon chia seeds
  • 1/2 teaspoon fresh ginger peeled and grated
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon honey or maple syrup optional, adjust to taste

Instructions
  1. Gather all ingredients: fresh nectarines, frozen mango, almond milk, chia seeds, ginger, lime juice, and sweetener (if using).
  2. Place the chopped nectarines and frozen mango chunks into a high-speed blender jar.
  3. Add the unsweetened almond milk, chia seeds, grated fresh ginger, and the teaspoon of lime juice to the blender.
  4. If you prefer a sweeter smoothie, add the optional honey or maple syrup now. Secure the lid tightly.
  5. Blend starting on a low speed and gradually increasing to high. Blend for 45-60 seconds, or until the mixture is completely smooth and creamy, stopping once or twice to scrape down the sides if necessary.
  6. Pour the Sunny Nectarine Smoothie immediately into a glass. Serve chilled. For best texture, consume right away.

Notes

For a thicker smoothie, use 1/4 cup less almond milk or add a few more frozen mango chunks. If nectarines are very ripe, you can omit the added sweetener entirely. Using frozen fruit eliminates the need for ice.
