- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the mashed sweet potato, unsweetened applesauce, egg, and peanut butter. Stir until thoroughly mixed into a smooth consistency.2 cups Cooked Sweet Potato, mashed, 1/4 cup Unsweetened Applesauce, 1 Egg, 1/4 cup Natural Peanut Butter (xylitol-free)
- Gradually add the whole wheat flour (or oat flour) to the wet ingredients. Mix until a stiff dough forms. If the dough is too sticky, add a tablespoon more flour at a time.1 cup Whole Wheat Flour (or Oat Flour for grain-free)
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
- Cut out your desired treat shapes using cookie cutters.
- Place the treats onto the prepared baking sheet, leaving a little space between each one.
- Bake for 20-25 minutes, or until the edges are lightly golden brown and the treats are firm to the touch.
- Turn off the oven and let the treats cool completely inside the oven with the door ajar. This helps them to dry out and become crisp.
Notes
Store in an airtight container at room temperature for up to 3-5 days. For longer storage, freeze for up to 1-2 months.
