Equipment

  • Mixing bowl
  • Loaf Pan or 8x8 inch Baking Pan or Silicone Muffin Molds
  • Wire rack
  • Toothpick

Method

  1. Preheat your oven to 350°F (175°C). Lightly grease a small loaf pan or an 8x8 inch baking pan. For ultimate convenience, you can also use silicone muffin molds.
  2. In a large mixing bowl, combine the mashed cooked sweet potato, unsweetened applesauce, plain yogurt, and the egg. Whisk until thoroughly combined and smooth.
1 cup Cooked Sweet Potato, 1/2 cup Unsweetened Applesauce, 1/4 cup Low-Fat Plain Yogurt, 1 Large Egg
  3. Stir in the rolled oats and xylitol-free peanut butter into the wet ingredients. Mix everything together until it forms a thick batter. Don't worry if it's a bit sticky.
1 cup Rolled Oats, 1 Tablespoon Peanut Butter
  4. Pour the batter into your prepared baking pan or molds, spreading it evenly.
  5. Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean. The cake should be firm to the touch and golden brown around the edges.
  6. Allow the Sweet Potato Oatmeal Dog Cake to cool in the pan for about 10-15 minutes before carefully removing it to a wire rack to cool completely. This step is important to prevent crumbling.
