- In a medium saucepan, combine the rolled oats, full-fat coconut milk, and water. If you’re aiming for an even richer, more decadent experience, you can substitute the water entirely with more coconut milk. - Place the saucepan over medium heat. Stir the ingredients together to ensure the oats are evenly distributed and don't clump. Bring the mixture to a gentle simmer, stirring occasionally.
- Once simmering, reduce the heat to low. Continue to cook, stirring frequently to prevent sticking, for about 5-7 minutes, or until the oats have softened and the mixture has thickened to your desired consistency. If the oats are still too firm or the mixture is too thick, you can add a splash more water or coconut milk.

Notes
