Method
 

  1. In a medium saucepan, combine the rolled oats, full-fat coconut milk, and water. If you’re aiming for an even richer, more decadent experience, you can substitute the water entirely with more coconut milk. Add the pinch of salt to enhance the overall flavor profile.

  2. Place the saucepan over medium heat. Stir the ingredients together to ensure the oats are evenly distributed and don't clump. Bring the mixture to a gentle simmer, stirring occasionally.
  3. Once simmering, reduce the heat to low. Continue to cook, stirring frequently to prevent sticking, for about 5-7 minutes, or until the oats have softened and the mixture has thickened to your desired consistency. If the oats are still too firm or the mixture is too thick, you can add a splash more water or coconut milk.
  4. Remove the saucepan from the heat. Stir in the maple syrup or honey and the vanilla extract. Taste and adjust the sweetness if needed, adding more sweetener according to your preference.
