- In a medium bowl, toss the chicken pieces with olive oil, chili powder, cumin, garlic powder, salt, and black pepper. - Heat a large skillet or grill pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes per side, or until fully cooked through and no pink remains. Remove the chicken from the skillet and set aside.
- If using frozen corn, you can add it directly to the skillet after removing the chicken (no need to thaw). If using fresh corn, you can either grill the ears and then cut off the kernels, or sauté them directly in the skillet until tender and slightly charred, about 5-8 minutes. - In a small bowl, combine the mayonnaise, crumbled cotija cheese, chopped cilantro, lime juice, and cayenne pepper (if using).
