  1. Combine the chopped rhubarb, sugar, and water in a medium saucepan.
  2. Stir gently to combine all ingredients.
  3. Place the saucepan over medium heat.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 10-15 minutes, or until the rhubarb is tender and has broken down, stirring occasionally.
  5. Taste and adjust sugar if needed. If the mixture is too liquid, simmer uncovered for a few minutes to thicken.
  6. Remove from heat and let cool slightly before serving. The stewed rhubarb will thicken further as it cools.

Notes

This recipe is very adaptable. For a more complex flavor, you can add a strip of orange or lemon zest while cooking, or a pinch of cinnamon. Serve warm or chilled.
