Oat Crumble Topping
  • 1 cup rolled oats (old-fashioned oats recommended)
  • 1/2 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 2-quart baking dish (an 8x8 inch or a similar round or oval dish works well).
  2. In a large bowl, combine your mixed berries. If using frozen berries, there's no need to thaw them completely; a little frost is fine. Add the granulated sugar, cornstarch (or flour), fresh lemon juice, vanilla extract, and a pinch of salt to the berries. Gently toss everything together until the berries are evenly coated.

  3. Pour the berry mixture evenly into the prepared baking dish. Spread them out so there are no large clumps.
  4. In a separate medium bowl, whisk together the rolled oats, all-purpose flour, packed brown sugar, granulated sugar, ground cinnamon, and ground nutmeg. These dry ingredients form the base of your delicious crumble.

  6. Evenly sprinkle the oat crumble mixture over the top of the berry filling in the baking dish. Ensure the entire surface of the berries is covered with the crumble.
  7. Place the baking dish on a baking sheet (this catches any potential berry drips) and bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and crisp, and the berry filling is bubbly around the edges.
  8. Once baked, carefully remove the Triple Berry Crisp Oat Crumble from the oven. Let it stand for at least 10-15 minutes before serving. This allows the filling to set slightly, making it easier to serve and preventing it from being scalding hot.
