Ultimate Chocolate Chip Cookie Pie

  • 2 cups semi-sweet chocolate chips (340g) (or a mix of semi-sweet and milk chocolate)
  • 1 pre-made 9-inch pie crust (or your favorite homemade recipe)

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie plate or use a pre-made crust as directed on its packaging.
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and packed light brown sugar until light and fluffy. This usually takes about 2-3 minutes with an electric mixer.

  3. Beat in the two large eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough.

  7. Spoon the cookie dough evenly into the prepared pie crust. You want to spread it out so it fills the crust as much as possible, but don't overfill it, as it will spread slightly while baking.

Notes

Once cooled completely, the pie can be stored loosely covered with plastic wrap or aluminum foil at room temperature for up to 2 days. For longer storage, tightly wrap the cooled pie in plastic wrap and then in aluminum foil, or place it in an airtight container. It will stay fresh in the refrigerator for up to 5 days. For long-term storage, allow the pie to cool completely. Wrap it tightly in a layer of plastic wrap, followed by a layer of aluminum foil, and then place it in a freezer-safe bag or container. The Ultimate Chocolate Chip Cookie Pie can be frozen for up to 3 months.
Reheating: Oven: Reheat individual slices in a preheated oven at 300°F (150°C) for about 5-10 minutes. Microwave: Microwave slices for 15-30 seconds on medium power. Thawing Frozen Pie: Let thaw at room temperature for about 30 minutes before reheating, or reheat directly in the oven at a slightly lower temperature (around 275°F/135°C) for a longer period, about 15-20 minutes.
