Ingredients
  

  • 1 pound Boneless, Skinless Chicken Thighs
  • ½ cup Cooked Plain White Rice
  • ½ cup Cooked Sweet Potato (mashed)
  • ¼ cup Cooked Carrots (finely chopped)
  • ¼ cup Cooked Green Beans (chopped)
  • 1 tablespoon Olive Oil

Method
 

  1. In a pot, add the chicken thighs and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the chicken is fully cooked and no pink remains. Drain the chicken and shred it into small, bite-sized pieces.

  2. While the chicken cooks, prepare your rice according to package directions. Ensure it is cooked until soft and easily mashable. Steam or boil the sweet potato until tender, then mash it thoroughly. Steam or boil the carrots and green beans until fork-tender, then finely chop them.
    ½ cup Cooked Plain White Rice, ½ cup Cooked Sweet Potato (mashed), ¼ cup Cooked Carrots (finely chopped), ¼ cup Cooked Green Beans (chopped)
  3. In a large mixing bowl, combine the shredded chicken, cooked plain white rice, mashed sweet potato, chopped carrots, and chopped green beans.
