For the Lime Dressing
  • 1/4 cup Fresh Lime Juice About 2-3 limes
  • 2 tablespoons Honey or Maple Syrup Adjust to taste
  • 1 tablespoon Fresh Mint Finely chopped
  • 1/4 teaspoon Lime Zest

  1. Prepare the dressing: In a small bowl, whisk together the fresh lime juice, honey (or maple syrup), lime zest, and chopped fresh mint until well combined.
  2. Prepare the fruit: Ensure the watermelon, berries, and optional cantaloupe are thoroughly washed and cut into bite-sized pieces. Pat dry any excess moisture from the berries.
  3. Combine the fruit: Gently place the diced watermelon, mixed berries, and any other desired fruits into a large mixing bowl. If using, add the thinly sliced red onion now.
  4. Dress the salad: Pour the prepared lime dressing evenly over the fruit mixture. Toss very gently to coat all the fruit without crushing the delicate berries.
  5. Chill (Recommended): Cover the bowl and refrigerate the fruit salad for at least 15 minutes before serving. This allows the flavors of the dressing to fully meld with the fruit.
  6. Serve chilled: Stir one final time before plating. Garnish with a few extra sprigs of mint, if desired.

Notes

For an extra textural element, consider adding 1/4 cup of finely chopped toasted pecans or slivered almonds just before serving. Do not make the dressing too far in advance, as the lime juice can begin to break down the softer fruits.
