  • 4 cups seedless watermelon cubed
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh mint leaves chopped
  • 0.25 cup red onion thinly sliced
Dressing Ingredients
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 0.5 teaspoon honey or agave nectar
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground

Method
 

Instructions
  1. In a small bowl, whisk together the extra virgin olive oil, lime juice, honey, salt, and black pepper until well combined to make the dressing. Set aside.
  2. In a large serving bowl, combine the cubed watermelon, sliced cucumber, crumbled feta cheese, chopped mint, and thinly sliced red onion.
  3. Gently toss the salad ingredients together to distribute them evenly.
  4. Drizzle the prepared dressing over the salad.
  5. Toss the salad gently again to coat all ingredients with the dressing.
  6. Serve immediately for the best texture and flavor.

Notes

For an extra kick, add a pinch of red pepper flakes. You can also add a handful of arugula for a peppery bite.
