  • 4 cups Seedless Watermelon cubed
  • 2 cups Fresh Strawberries hulled and quartered
  • 1 large Cucumber peeled, seeded, and chopped
  • 1/4 cup Fresh Mint Leaves chopped
  • 1/4 cup Feta Cheese crumbled (optional)
Mint-Lime Dressing
  • 3 tablespoons Lime Juice freshly squeezed
  • 2 tablespoons Olive Oil extra virgin
  • 1 teaspoon Honey or agave nectar
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper freshly ground

Method
 

Instructions
  1. Prepare the dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
  2. In a large serving bowl, combine the cubed watermelon, quartered strawberries, and chopped cucumber.
  3. Add half of the chopped mint leaves to the fruit and cucumber mixture. Toss gently.
  4. Drizzle about half of the prepared dressing over the salad and toss gently to coat.
  5. If using, sprinkle the crumbled feta cheese over the salad.
  6. Garnish with the remaining fresh mint leaves. Serve immediately or chill for about 15 minutes before serving.

Notes

For an extra boost of flavor, you can add a pinch of red pepper flakes to the dressing or a sprinkle of thinly sliced red onion to the salad. This salad is best enjoyed fresh.
