Method
- Begin by peeling your ripe kiwis. Once peeled, slice them into uniform rounds or half-moons. Arrange the kiwi slices attractively in individual serving dishes or on a platter. Aim for an even layer to ensure each bite is balanced.6 ripe kiwis
- In a small bowl, gently toss the prepared kiwi slices with 1/4 cup (50g) of granulated sugar and the freshly squeezed lime juice. The lime juice will help to enhance the natural sweetness of the kiwi and prevent it from becoming overly syrupy. Let this mixture sit for about 10 minutes, allowing the sugar to start dissolving and drawing out some of the kiwi’s juices.6 ripe kiwis, 1/4 cup granulated sugar, 2 tablespoons fresh lime juice
- Stir in the 1 teaspoon of vanilla extract into the kiwi mixture. This will add a subtle warmth and aromatic complexity that complements the fruit beautifully.1 teaspoon vanilla extract
- In a separate, chilled bowl, whip the cold heavy cream until soft peaks form. If you prefer a sweeter whipped cream, you can gradually add the 2 tablespoons of powdered sugar and continue to whip until stiff peaks form. Be careful not to over-whip, or you'll end up with butter.1 cup heavy cream, 2 tablespoons powdered sugar
- In a small, dry saucepan, melt the remaining 2 tablespoons of granulated sugar over medium-low heat. Do not stir initially; instead, gently swirl the pan as the sugar begins to melt and turn amber. Once it's a rich golden-brown color, immediately remove it from the heat. Be cautious as caramel is very hot.2 tablespoons granulated sugar
- Spoon a generous dollop of the whipped cream over the kiwi slices in each serving dish. You can either pipe it on for a more elegant presentation or spoon it on for a rustic feel. Drizzle the warm, freshly made caramel sauce sparingly over the whipped cream and kiwis. Garnish with fresh mint leaves or edible flowers for a final touch of beauty. Serve immediately to enjoy the contrast of the chilled fruit and cream with the warm caramel.1 cup heavy cream, 2 tablespoons granulated sugar, fresh mint leaves, edible flowers
Notes
This dessert is best enjoyed fresh. Leftovers can be refrigerated for 1-2 days, but the kiwi may soften. Freezing is not ideal.
