- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined to make the vinaigrette.
- In a large mixing bowl, combine the sliced cucumbers, sliced apples, and thinly sliced red onion.
- Pour about half of the prepared vinaigrette over the salad mixture.
- Gently toss the salad to coat all the ingredients evenly with the dressing.
- Add the chopped fresh parsley and toss once more.
- Taste and add more dressing, salt, or pepper if needed. Serve immediately for best texture.
Notes
For a creamier dressing, you can add a tablespoon of Greek yogurt or mayonnaise to the vinaigrette. This salad is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to a day.
