  • 2 medium Cucumbers peeled (optional), seeded and thinly sliced
  • 2 medium Apples such as Fuji or Honeycrisp, cored and thinly sliced
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Fresh Parsley chopped
Lemon Vinaigrette
  • 3 tablespoons Olive Oil extra virgin
  • 1.5 tablespoons Lemon Juice freshly squeezed
  • 1/2 teaspoon Dijon Mustard
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper freshly ground

Method
 

Instructions
  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined to make the vinaigrette.
  2. In a large mixing bowl, combine the sliced cucumbers, sliced apples, and thinly sliced red onion.
  3. Pour about half of the prepared vinaigrette over the salad mixture.
  4. Gently toss the salad to coat all the ingredients evenly with the dressing.
  5. Add the chopped fresh parsley and toss once more.
  6. Taste and add more dressing, salt, or pepper if needed. Serve immediately for best texture.

Notes

For a creamier dressing, you can add a tablespoon of Greek yogurt or mayonnaise to the vinaigrette. This salad is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to a day.
